Banana Nut Pancakes with Caramelized Banana and Coconut Topping!




     Ask anyone who knows me fairly well, and they can definitely assure you without hesitation that some of my favorite things in this world includes anything breakfast, and anything bananas.  As a result, I'm always experimenting with gluten free, and healthy breakfast ideas that include my favorite fruit, which are undoubtedly....bananas. 

 Pancakes are one of the sweetest and more favorable breakfast ideas for many, and they are also one of mine and my mother's specialty breakfast staples. So what better way to experiment with banana, then throw them into a pancake recipe?

Today I present to you one of my favorite breakfast ideas:  Gluten-free Banana Nut Pancakes, with a layer of warm and smooth banana, caramelized in brown sugar, and topped with fresh coconut flakes.

Here is how to make:

Ingredients

What you'll Need for the Pancakes:

- 1 Cup of Pancake Mix ( I use Pamela's gluten free, wheat free Baking and Pancake Mix)
- About 1/2 Cup or handful of Almonds
- 1 egg
- 1 Banana
- Sprinkle of Cinnamon
- 1 Cap Full of Organic Sunflower/Safflower Seed Oil ( I used the Organic 365 brand Safflower Seed Oil)
- 1 Table Spoon of Organic Coconut oil
- About a 2/3 Cup of water


Stir Ingredients together in a small bowl, until a smooth rich texture is created. Pour contents of bowl onto a pancake griddle, or pan. 

Let cook for a couple of minutes until browning occurs, and flip to the other side. My ideal pancakes are firm and browned, but follow your instinct and cook until you feel the pancake is ready for eating!

What you'll Need for the Caramelized Banana topping with Coconut flakes:

- About 1/2 Cup of Brown Sugar
- 1 Banana 
- Water ( About 1 or 2 tablespoons of water; just make sure there is less water than brown sugar.)
-Cinnamon
- About 1 tablespoon of Vegan Butter ( I use the Earth Balance brand)


For the topping, chop up the banana and mash the pieces in a cup/bowl. Put all contents of the ingredients into a pot and boil on Medium/High heat until bubbling and browning occurs. Then just layer the warm mixture onto fresh made banana nut pancakes.

Top it all off with a sprinkle/dash of coconut flakes and you are good to go!

Disclaimer: I like to refer to myself as an "eyeball cooker". My measurement listings aren't all 100% accurate, which is why I emphasized 'about' in a lot of the ingredients. The measurement are more or less what I listed. If you feel your batch needs more or less of a certain ingredient, feel free to add it!
