Hello Lovelies!
I would love to begin with an overtly enthusiastic exclamation: Fall has finally arrived!
Now to carry on, since it had to be said, I would like to clarify that although I do love Fall, this post will not have much relevance to the season itself, except for the fact that when I think of Fall, I think of soup. Am I alone in this?
Perhaps it is something about the air becoming a little cooler, the wind becoming a little crisper, the days becoming a little shorter. Falling into fall (yes pun was indeed intended) becomes an even lovelier descent when I remember all the foods that I associate with the season. From apples, to pumpkins, to cinnamon to well...soup.
Which brings this incredible (and long) introduction to a close, in which I come to the point of this blog post: my introduction to you, of one of my favorite soups of all time! ( Which also so happens to be one of my favorite meals period.)
Split Pea and Carrot Puré!
So creamy, so smooth, and oh so warm; the perfect treat-in-a bowl luxury for those cuddling on the couch watching movies on a crisp Fall kinda day. Here is what you will need:
-Split Pea
-Water or Vegetable Broth
-Peppers
-Onions
-Garlic
-Carrots
First, add a little bit of oil to a pot to sauté the garlic and the onions. Add carrots (I usually cut up a whole stick), the split peas ( about 3 cups) and water. There should be around 3-4 more cups of water added to the mix than split peas, depending on how watery you prefer your soup. Add salt and pepper for taste.
Bring everything to a boil for about 5 minutes and then lower the temperature to medium-low. Allow to simmer for about 25 to 30 minutes, or until the peas are tender.
I usually finish off my soup creation in the blender; creating a thick and creamy texture. Eat right away, or keep refrigerated until ready to warm up and eat!
I wouldn't dare share my soup creation secrets with you if I didn't think it was absolutely worth it! So get on boiling, simmering, blending, and enjoying!
